![]() Price: €15 per person Program 10 meters under the blooming garden of Kipos restaurant we enter a 400-year-old cave to discover a cellar with more than 250 labels of wines from Greece and the international vineyard. The wine tasting starts at 11.30 and all the participants have their seats on the old-style monasterial table. In the beginning, our oenologist explains the secrets of Greek wine-making and, specifically, of Santorinian wines. The traditional wine making in our island takes place in the underground "canavas" and along with micro-climate of the island gives the wines unique characteristics. The first wine is the unique “Santorini Assiytico” with the high acidity and the metallic taste. Being the most famous grape in Santorini, you can still find in other regions of Greece, but only in Santorini it gives wines with high acidity, sense of earth and metal on the nose and the mouth. It has a yellow colour with green sheens. We can find vivid and fine aromas of minerals, lemon blossoms, pear, pineapple, citrus and white flowers. Its structure is full, round in the mouth with long finish coming from its sparkling acidity. We continue, with the “Nichteri” from over-ripped grapes aged in an oak barrel for 3 months. Nichteri also is produced from the variety Asyrtico, but the grapes have been harvested later, so the wine produced has higher alcoholic percentage (at least 13,5%). An obligatory aging in an oak barrel gives the wine a “round” flavour, more aroma and smooth taste. In old times, in order to produce the “Nichteri”, locals were harvesting late at night or early in the morning, so to protect their grapes from the summer temperatures. That’s why they were calling them nichteri, meaning night shift in Greek. Nichteri is similar in characteristic with Santorini Asyrtico, but now this wine is smooth (aging in barrel), still has long finish and full bodied and kind aromas of pear and jasmine. Our next wine is the traditional red wine, which is a mix of the indigenous varieties Mandilaria, Mavrotragano and Voudomato. These are some of the oldest grape varieties in the world and their combination produces wine of rich bouquet and complexity in the mouth.The red wine has bright red colour with aroma of spices, red fruits and hints of leather, with rich and gentle tannins and balanced acidity. At the end, you will taste - directly from the barrel - the famous sweet wine, “Vinsanto”.It is produced of over-ripped white grapes, which have been sun-dried for 15 days under the hot sun of Santorini, so they can give a concentrated, sweet golden wine with intense flavour of dry raisin, dry fig, honey and coffee. Vinsanto ages in oak barrels for at least 2 years and can also age for up to 15 or even more in special conditions. Price: €15 per person |
